I am no vegan, but sometimes, for a few days during the week, I try to go vegan. Justin and I recently tried this cherry tomato pasta dish this week. We both love cherry tomatoes of all colors, especially when they are in season. We also are very into cooking with lots of garlic right now, all of a sudden (no idea why) and we tried this particular recipe and it was delicious! This is a simple recipe and you can get this dinner ready within 30 minutes.
Ingredients
- Orecchiette or Fussili Pasta
- Cherry tomatoes (all colors you can get)
- Basil or arugula
- Lots of garlic
- Very good quality extra virgin olive oil
- Salt & Pepper to taste
Directions
Boil your pasta with salt to al dente. While your pasta is boiling, put extra virgin olive oil in a pan and throw in pressed garlic (lots of it) for a few minutes. When your garlic starts to cook, add in your halved cherry tomatoes and basil (or arugula) to the pan. Cook for about 15 minutes.
After your pasta has boiled to taste, throw it in the pan with tomatoes, garlic, and herbs. Season with salt and pepper as needed. Mix and turn off the heat. Your dinner is ready to be served. You can actually eat this cold or hot. We prefer hot. Trust me, you will love this dish! So simple, but yet so delicious!
