How many times have you read or heard that we are supposed to begin our day by drinking water to get our digestive system running? Bored of drinking water? Try drinking cucumber-infused water! Cucumbers are technically fruits. While they are mostly made of water, they also provide anti-inflammatory compounds, antioxidants and vitamins. Cucumber water is very ssimple to make and technically only requires two ingredients: a whole cucumber and plain water, unless you want to jazz it up a little!
- Slice one medium cucumber into thin slices. I like to leave the skin on since the antioxidants are hidden in the skin;
- Fill a large pitcher with water, then add as many ice cubes as you would like;
- Mix the cucumbers into the water. Add any additional ingredients you might like to improve the taste, such as fresh lemon or lime juice, chopped/torn mint or basil, crushed or whole berries or ginger. (I prefer fresh mint and lemon!)
I recommend doing this with organic cucumbers, and good quality water. How long can you keep cucumber slices in water? After a few hours the cucumber will start to release its water. This won’t affect the taste immediately, but it might not look as beautiful. I usually make a pitcher early in the morning and we drink it within 6-8 hours of making it. Justin and I both love it! Makes us feel healthy and at the spa when we drink it.
